Description
Chestnut mushrooms are also known as cinnamon caps and Fat Pholiota, or numerisugitake mushrooms in Japan. The chestnut mushroom’s scientific name gives an indication of its appearance. “Pholiota” is the Latin word for scaly, and “adiposa” comes from the Latin word “adeps,” meaning lard or grease.
Cooking
No need to peel the skin or discard the stalk, just wipe with a damp cloth prior to cooking. Roast, grill or fry in pasta sauces, stir-fries, risottos, soups, stews, and more.
