Lion’s mane mushrooms, also known as hou tou gu or yamabushitake, are large, white, shaggy mushrooms that resemble a lion’s mane as they grow.
If you’ve never tasted lion’s mane mushrooms before, you’re in for a treat. When it’s cooked it’s juicy, delicate, tender, and meaty. The taste of lion’s mane mushrooms is best described as seafood-like with a flavour reminiscent of crab, lobster, and other shellfish. This is why it’s often used as a vegetarian substitute in seafood dishes.
